Quick and Delicious Pumpkin Waffles with Maple Butter


Ingredients:

non-stick cooking spray
2 cups Bisquick
1 teaspoon pumpkin pie spice
1 cup milk
½ cup canned pumpkin
1/4 cup chopped pecans (optional)
1 teaspoon vanilla extract
2 tablespoons unsalted butter, melted
1 tablespoon vegetable oil
1 large egg
1 cup heavy cream
2 tablespoons maple syrup
butter
pumpkin or apple butter
walnuts or pecans (optional)


Directions:

Lightly grease a waffle maker with some non-stick spray and preheat.

In a bowl, whisk together Bisquick and pumpkin pie spice. Make a well in the center of the flour mixture.

In a glass measure, combine the milk, pumpkin, pecans, vanilla, butter, oil and egg. Whisk until smooth. Add to the flour mixture and stir until just combined. The batter will be lumpy and that is just fine.

Add batter to the waffle maker and close the lid. Bake until crispy and golden brown.

Remove the waffle with a fork. Repeat with the remaining batter and serve warm.

Make the maple butter by using a mixer and beating the butter with the maple syrup.  Serve with the warm waffles and cover with a dollop of pumpkin or apple butter and sprinkling of walnuts of pecans.
